Ingredients


Rice flour dry roasted and sieved 2 cups
Boiling water, as required for mixing the dough
Salt to taste
A little ghee


METHOD

Add the boiling water,ghee and salt to the flour and
knead to a soft dough. Divide it into small balls and
keep aside. Lightly grease the iddiappam press mould and
put in one portion of the dough. Press out the dough to
mounds (resembling thin noodles) onto each of the stands.
Steam for about 10 minutes till the iddappam is cooked.

Spicy Idiyappam

Onions chopped
Tomatoes chopped
Green chillies 2
Idiyappam 2 cups
Cardamon 2
Cinnamon 2 sticks
Cloves 2

METHOD

Heat oil season with cardamon,cloves ,cinnamon and bay
leaves. Fry onions,tomatoes, chillies and add the cooked
idiyappam.Mix well and garnish with mint .

Coconut Idiyappam

To prepared idiappam add some of the fried cahewnuts and 3 tsp grated Coconut and 1tsp sugar,mix well.

Lemon Idiyappam

Heat oil season with mustard ,urad dhal,curry leaves and red chillies .Add the the sevai and mix well with the juice from half a Lemon.
